Nacho Potatoes


NACHO POTATOES BY WOOLWORTHS

INGREDIENTS

  • Potatoes

  • Avocado

  • Tomatoes

  • Red Onion

  • Olive Oil

  • Beef Mince ( Or mince of your choice)

  • Mexican Chilli Powder

  • Smokey Chipotle Chedder

  • Tasty Cheese

METHOD

  1. Preheat oven to 220°C/200°C fan-forced.

  2. Prick each potato 6 times with a fork & then wrap potatoes in foil. Bake for 1 hour or until potatoes are tender.

  3. Allow to cool for 15 minutes. Place avocado in a small bowl and mash with a fork until smooth. Stir in half each of the tomato and onion.

  4. In a pan cook mince, add seasoning, remaining tomato & onion until cooked.

  5. Once potatoes are cooked scoop out potato leaving 5mm of shell and place scooped potato in a separate bowl.

  6. Mash potatoes in bowl with mince. Fill the potato shells with mince mixture , sprinkle cheese and bake for 10 minutes before serving with guacamole.
