NACHO POTATOES BY WOOLWORTHS

INGREDIENTS
Potatoes
Avocado
Tomatoes
Red Onion
Olive Oil
Beef Mince ( Or mince of your choice)
Mexican Chilli Powder
Smokey Chipotle Chedder
Tasty Cheese
METHOD
Preheat oven to 220°C/200°C fan-forced.
Prick each potato 6 times with a fork & then wrap potatoes in foil. Bake for 1 hour or until potatoes are tender.
Allow to cool for 15 minutes. Place avocado in a small bowl and mash with a fork until smooth. Stir in half each of the tomato and onion.
In a pan cook mince, add seasoning, remaining tomato & onion until cooked.
Once potatoes are cooked scoop out potato leaving 5mm of shell and place scooped potato in a separate bowl.
Mash potatoes in bowl with mince. Fill the potato shells with mince mixture , sprinkle cheese and bake for 10 minutes before serving with guacamole.
