Recipe of the Month: One-pan Pesto Risoni


Quick and easy to make with little mess, this One-pan Pesto Risoni will easily have you adding the ingredients to your grocery list.


Ingredients

  • Red onion

  • Extra virgin olive oil

  • Risoni

  • Basil Pesto

  • Cooked Chicken

  • Tomatoes

  • Lebanese cucumber

  • Danish feta, crumbled

  • Basil leaves

Methods

  1. Heat oil in a large, deep frying pan. Add finely chopped onions & cook for 4 minutes until softened. Add risoni, then stir for 1 minute.

  2. Add pesto and 2 1/3 cups water and bring to the boil over high heat. Reduce heat and simmer, covered, for 10-12 minutes, stirring occasionally until risoni is tender.

  3. Divide risoni mixture to serve topped with chicken, tomato, cucumber, feta, basil and remaining onion. Season with pepper.
