Cream of Chicken Lasagne


This simple, five-ingredient dinner recipe features cream of chicken soup to create a luscious, delicious sauce for chicken lasagne.


Ingredients

1/4 cup extra virgin olive oil

1kg Woolworths Australian RSPCA-approved chicken mince

810g condensed cream of chicken soup

12 sheets dried lasagne

120g leafy mixed salad

Method

Step 1

Preheat an oven to 180°C/160°C fan-forced. Grease a 2L (8-cup capacity) rectangular baking dish. Heat 2 tbs oil in a large, deep frying pan over high heat. Add mince and cook, stirring to break up lumps, for 4 minutes or until cooked. Add soup, reserving one-quarter in a bowl. Bring to the boil.

Step 2

Spoon 1/4 cup mince mixture over base of prepared dish. Top with one-third of the lasagne sheets. Top with one-third of the mince mixture. Repeat layering, finishing with remaining lasagne sheets. Add ½ cup water to the reserved soup and stir to combine. Pour soup mixture over lasagne, then bake for 45 minutes or until lasagne sheets are tender when pierced with a skewer.

Step 3

Place salad mix in a bowl. Drizzle with remaining oil. Season with pepper. Toss gently to combine. Serve lasagne with salad.
