Lasagne Pockets Recipe from Woolworths


With all the classic Italian flavours of a comforting slice of lasagne in a handy pocket-shaped parcel, these dinnertime delights will go down a treat with kids and the young at heart.


Ingredients

1 tbs extra virgin olive oil

1 brown onion, finely chopped

2 cloves garlic, crushed

500g Woolworths beef mince

500g Macro Organic chunky bolognese pasta sauce

375g fresh lasagne sheets, halved lengthways

2 tbs sour cream

1 1/3 cups Woolworths mozzarella, cheddar & parmesan shredded blend

150g baby leaf mix with carrot

100g cherry tomatoes, halved

Directions

Step 1

Heat half of the oil in a large frying pan over medium-high heat. Cook onion and garlic, stirring, for 5 minutes or until onion softens. Add mince. Cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add pasta sauce and bring to the boil. Reduce heat to medium and simmer for 5 minutes or until thickened. Set aside to cool slightly.

Step 2

Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper. Arrange 2 lasagne strips on a flat surface to form a cross. Spoon 1/4 cup bolognese mixture into the centre of cross. Top with 1 tsp sour cream and 1 tbs cheese.

Step 3

Fold up to enclose filling and form a square pocket. Transfer to tray. Repeat with remaining lasagne strips, bolognese, sour cream and cheese to make 8 pockets in total.

Step 4

Top pockets with remaining cheese. Bake for 10 minutes or until cheese is golden. Stand for 5 minutes. Season with freshly cracked black pepper. Combine leaf mix and tomatoes with remaining oil. Serve pockets with salad.
