Quick and easy to make with little mess, this One-pan Pesto Risoni will easily have you adding the ingredients to your grocery list.
Ingredients
Red onion
Extra virgin olive oil
Risoni
Basil Pesto
Cooked Chicken
Tomatoes
Lebanese cucumber
Danish feta, crumbled
Basil leaves
Methods
Heat oil in a large, deep frying pan. Add finely chopped onions & cook for 4 minutes until softened. Add risoni, then stir for 1 minute.
Add pesto and 2 1/3 cups water and bring to the boil over high heat. Reduce heat and simmer, covered, for 10-12 minutes, stirring occasionally until risoni is tender.
Divide risoni mixture to serve topped with chicken, tomato, cucumber, feta, basil and remaining onion. Season with pepper.
