Woolworths' Ginger Mushroom Soup with Soba Noodles Recipe


Craving a healthy and filling homemade soup? Aromatic ginger, mushroom and noodle soup is the perfect, quick and easy choice.


Ingredients:

1 tbs sesame oil

200g mixed mushrooms, cleaned, sliced

1 tsp ginger, peeled, minced

2 tbs soy sauce

4 cups water

2 tbs white miso paste

1 tbs dashi powder

300g firm tofu, cut into bite-sized pieces

270g soba noodles, cooked as per packaged instructions

2 stalks scallions, thinly sliced

Directions:

Step 1

Set a pot with the sesame oil onto medium-high heat for 1 minute. Add the mushrooms and ginger to the pot sauteing for 2 minute. Whisk in the soy sauce, water, miso paste and dashi powder bring the soup up to a simmer for 10 minutes.

Step 2

Add the tofu, soba noodles and scallions to the pot to heat for 1 minute before pouring into bowls.
