Woolworths' Honey Hoisin Chicken & Veggie Stir-Fry with Rice


Chicken and veg are tossed in honey, lime, hoisin and ginger to take this chicken stir-fry to the next level. Serve this easy dinner with speedy microwave rice.


Ingredients

1 tbs crushed ginger

1 tbs salt-reduced soy sauce

2 tbs hoisin sauce

2 tbs Woolworths pure honey

2 tsp cornflour

2 limes, 1 juiced, 1 cut into wedges

1 long red chilli, thinly sliced

1 tbs vegetable oil

500g Macro free range chicken stir-fry strips

2 bunch bok choy, stalks thinly sliced, leaves roughly chopped

150g snow peas, trimmed

1/2 cup frozen peas

450g microwave long-grain white rice

Directions

Step 1

Combine ginger, sauces, honey, cornflour, lime juice and half the chilli in a small bowl.

Step 2

Heat half the oil in a wok or large, deep frying pan over high heat. Stir-fry chicken for 3 minutes or until browned and cooked through. Transfer to a bowl.

Step 3

Heat remaining oil in same wok or frying pan over medium-high heat. Add bok choy, snow peas and 2 tbs water, then stir-fry for 3 minutes or until almost tender. Add chicken, sauce mixture and peas, then stir-fry for 2 minutes or until heated through.

Step 4

Meanwhile, cook rice according to packet instructions. Divide rice among plates and top with stir-fry. Scatter with remaining chilli and serve with lime wedges.
