These freakishly fun and flavourful spaghetti and meatball eyes are a must for your Halloween party.
INGREDIENTS
500g lean beef mince
1/4 cup dried packaged breadcrumbs
1 free range egg, lightly beaten
1 small brown onion, finely grated
2 tbs spaghetti bolognese herb blend
5ml extra virgin olive oil cooking spray
110g Woolworths cherry bocconcini, sliced
1/4 cup drained sliced black olives
400g spaghetti
700g Woolworths chunky pasta sauce
1/4 bunch basil, leaves picked
DIRECTIONS
Step 1
Preheat oven to 220°C/200°C fan-forced. Combine mince, breadcrumbs, egg, onion and seasoning in a large bowl. Using a heaped tablespoon as a guide, roll the mixture into 16 balls. Transfer to an ovenproof dish, spray with oil and bake for 10 minutes until browned. Top each meatball with a slice of bocconcini followed by a slice of olive. Return to oven to bake for a further 3 minutes or until the bocconcini has melted slightly.
Step 2
Bring a large saucepan of salty water to the boil. Add spaghetti and cook for 10 minutes or until just al dente. Reserve ¼ cup of water, drain and set aside.
Step 3
Add pasta sauce, reserved water and ½ of the basil to the pan. Heat over a low temperature for 5 minutes or until simmering. Add pasta, toss to coat and remove from heat.
Step 4
Serve spaghetti topped with meatballs and remaining basil.
