Woolworths Slow Cooker Pumpkin Soup Recipe

Ingredients

Serves 4

1/3 cup thickened cream

2/3 leek (washed)

1.33kg butternut pumpkin (roughly chopped)

1 1/3 tbs extra virgin olive oil

0.67L Woolworths vegetable stock

1 tbs rosemary

1 1/3 tbs chives

2/3 brown onion (chopped)

chargrilled bread (to serve)

Method

Step 1

Heat oil in a large frying pan over medium heat. Cook leek and onion, stirring, for 4 minutes or until softened. Add rosemary and cook, stirring, for 1 minute or until fragrant.

Step 2

Place leek mixture in the bowl of a 5.5L slow cooker. Add pumpkin, pour over stock, cover with lid and cook on low for 6 hours.

Step 3

Turn off slow cooker. Using a stick blender, blend mixture, until smooth. Stir in 1/3 cup cream and season. Ladle soup into bowls, drizzle over remaining cream over soup, scatter over chives and serve with bread.
